Spicy Sweet Pepper Slaw
Serves 6 @ 48 calories per serving

2 Tbsp Lu’s canola mayo
2 Tbsp rice wine vinegar
2 Tbsp soy sauce
1 Tbsp fish sauce
2 tsp hot chili sauce (Sriracha or Sambal Oelek)
4 cups red cabbage sliced
1 yellow pepper julienne
1 green pepper julienne
½ cup thinly sliced red pepper
½ cup chopped cilantro leaves

Whisk the mayo, vinegar, soy, fish and chili sauce together. In a large bowl toss all other ingredients then toss with the dressing and refrigerate for an hour to blend flavors. Serve chilled.
