Olive and Sun-dried Tomato Hummus


This is a great way to get your daily beans and is a little spin on the normal hummus that my honey oh so dislikes....he loves this dip!!  Use organic Eden brand garbanzo beans to whip this dip up super fast!!
2 cups cooked chickpeas
3 1/2 T fresh squeezed lemon juice
1 T tahini
1 T Extra virgin olive oil
3 cloves garlic (more or less depending on how sharp you like your dips)
salt to taste
5 T water to thin
1/4 cup Kalamata olives
1/4 cup green olives
2 T sun-dried tomatoes in olive oil.
Put chickpeas, lemon juice, tahini, olive oil and garlic in a food processor and puree until smooth, adding water does make the dip smoother and you can adjust the thickness with water.  Season to taste and then add the olives and tomatoes and pulse to chop them but do not puree, leave them in little chunks in the dip. 
Serve with fresh veggies, Delicioso!
