Beets in Walnut Vineagrette
Serve cold as a salad or warm as a side dish.
2 large Beets
1/2 cup Walnut Vinaigrette Dressing
1. Preheat the oven to 350 degrees, wash and dry the beets and cut into quarters. Put the beets on a baking sheet and cook for about 25 minutes until they are tender and done and a fork will easily punctures the root. Then remove from oven and let cool enough to handle.
2. While beets are baking make the vinaigrette and set aside. peel the beets (skins should come of really easy). and then slice or dice to your desired size. Dress with vinaigrette and serve warm.
