Pearl Barley Pilaf
Makes 4 cups
1 T coconut oil
2 cloves garlic, minced
1 T ginger minced
white parts of scallions
whole seeds - nigella seed, fenugreek, fennel, and cumin, toasted. (substitute curry powder)
1 1/2 cups pearl barley, rinsed and drained
3 cups water
cilantro and scallions for garnish.
Heat a medium sauce pan to medium high and add the oil, then add the garlic, ginger, and scallions and saute for about 5 minutes until soft, then add the whole seeds and cook until fragrant. Add the pearl barley and coat with oil and spices, then add the water and bring to a boil, covering the saucepan with a tight fitting lid. Reduce to a simmer on medium low and cook for 20 minutes or until soft.
