Lentil and Root Veg Salad with Spicy Lemon Tahini Dressing
We love this salad because it is hearty and really fills you up!!! Taste delicious too. Cook the lentils and beet root in advance and keep in the freezer in serving size portions for easy use. Just pull them out in the morning and they will be defrosted in time for dinner.
place all prepared ingredients in a bowl and drizzle with dressing. The potatoes are really nice if they are still warm. Instructions for each item are
Romaine Lettuce - washed and chopped
Lentils - prepared and cooled
Potatoes - prepared and reserved
Beet Root - prepared in advance, remove from freezer 24 hours in advance and defrost in the cooler
Tomatoes - diced
Cucumber - peeled and diced
Peas - if frozen put in a colander and rinse with cool water
Sunflower seeds - optional
