Eggplant Wrap with refried beans

Use my Eggplant Dip as a filling for this wrap and add the veggies that you love.

Whole wheat tortilla
1/2 cup vegetarian re-fried beans
1/2 cup Eggplant dip
1/2 cup carrots shredded
1/2 small tomato diced.
Add any additional items such as sprouts, romaine, etc.

heat a tortilla over low heat, and heat the beans in a microwave.  Spread the beans on the warmed tortilla in the center of the tortilla, then spread the dip and place the vegetables in the tortilla, roll up the wrap and enjoy.
