Tzatziki

Greek yogurt is a great pro-biotic to keep your tummy flora in check, and with all the garlic in this recipe anti-inflammatory too!

2 cups Greek yogurt (I use FAGE or The Greek Gods brands)
1 cucumber peeled, seeded and shredded
juice of 1 lemon
4-8 cloves of garlic, minced
1 tsp salt
1 T fresh mint, oregano or dill minced (optional)

Place the yogurt in a strainer lined with cheese cloth over a bowl and refrigerate for 2 to 24 hours, this step is unnecessary if you use full fat greek yogurt.  Mince the garlic finely and place all ingredients in a mixing bowl and stir to combine.  Serve chilled, can be held in the refrigerator for 3 days.
