Greek Salad
2 cups cucumber - peeled and cut into large dice
2 cups tomatoes - cut into large dice
1/4 cup red onion - thinly sliced
1/4 cup Kalamata olives chopped
1 Tbsp fresh oregano, finely chopped
1/4 cup feta cheese (optional) - I have seen this served in a brick, crumbled or in dice....choose your own look or just leave it out if you are avoiding dairy.
drizzle of olive oil optional
